This medium-spicy Ethiopian blend has a base of paprika and garam masala, with strong accents of baking spices like ginger and cinnamon. Toasted ground cumin and anise seeds give it an appealing crunchy texture. Although it has many of the same warming notes as ras el hanout, it skews more savory due to notes of onion and garlic. WHAT TO LOOK FOR · A bright, rich red color indicates a blend that will have vibrant flavor; if it’s dull or dark, chances are the mixture has been improperly stored or is past its prime. Bits of the ground cumin and coriander seeds should be visible as well. If possible, give the berbere blend a sniff; there should be a faint aroma of toasted chiles.
