These natural sweeteners are as much a pure expression of their terroir as wine is, taking on the distinctive characteristics of the flowers from which the bees collected pollen. So although honey is used all over the Middle East and Mediterranean for baking and as an all-purpose sweetener, little of it is produced locally. For Middle Easterners, the quality of a honey trumps its provenance, and honeys imported from Germany in particular are known to be of excellent quality. In our stores we carry German honey plus a few domestically produced honeys from small producers. Check your farmers market for honey produced in your area; it’s said that eating honey made from local pollen can even help mitigate seasonal allergies.
