A very versatile natural flavour taken from the root of the vanilla orchid plant. It comes in many forms: liquid (extract), the whole pod that is split and seeds scraped out, powder and my favourite to use in baking, vanilla bean paste. For best flavour, be sure to use the real thing and avoid using vanilla flavouring.
