To Prepare Calf’s Brain

The method of preparation is similar to that for sweetbread. Soak the brain for 24 hours in cold water. The brain is soft and you will not need anything other than your fingers to trim it. It will easily separate into two large pieces and one smaller piece, which may be discarded. Pinch away the creamy white parts from the underneath of the brain, and any damaged or very dark areas. Put the brain into a saucepan with a little white wine, shallot, black pepper, salt and a squeeze of lemon. Add just enough water to cover, then place a butter paper or circle of greaseproof paper on top. Bring to the boil and remove from the heat. Allow to cool in the cooking liquor. The brain is now ready to use in a recipe such as the one below.
