AGUARDIENTE DE ORUJO is an explosive spirit made, like the French marc, by distilling the grape skins or pips left over from fermentation. The Galicians use it to make Queimada.

ANIS This aniseed-flavoured liqueur is water-white and comes in both sweet and dry varieties. It is drunk chilled or over ice and is popular in cooking.
ARTICHOKES, GLOBE The flower bud of the thistle-like artichoke plant, the globe artichoke should have stiff, tightly-packed leaves. If the leaves have opened out, the artichoke is growing into the flower and becoming old and tough, so avoid choosing these. The leaves should be green, showing no brown patches or tips.
