  • About
  • One square (1 oz) of unsweetened chocolate in baking can be replaced with 3 Tbsp unsweetened cocoa powder plus ½ Tbsp canola oil. A great lower-fat alternative!
  • To melt chocolate in the microwave, microwave uncovered on Medium (50%). For 1 to 2 oz chocolate or 1 cup chocolate chips, allow 2 to 3 minutes, stirring every minute. For 8 to 16 oz, allow 3 to 4 minutes. Stir after 2 minutes, then again every minute.
  • Container must be dry and chocolate should not be covered. Otherwise it can seize (get thick and lumpy).
  • CHOCOLATE RESCUE: If chocolate seizes, add oil 1 tsp at a time; stir until smooth. Another remedy is to add an equal volume of hot liquid (cream, milk or coffee) plus a few drops of vanilla extract or liqueur—instant chocolate sauce! Another scrumptious solution is to make Chocolate Truffles.
