In Greece, salads vary according to season and are served either with appetizers or with the main course.
In the winter Greeks enjoy a salad made of shredded raw cabbage seasoned with just lemon and olive oil. This salad is delicious when made with Greek cabbage—American and European cabbages are not as tender nor as tasty. Greeks at home very rarely eat tomato salads during winter, although there are now greenhouse tomatoes available year round. But the flavor of greenhouse tomatoes is nothing like that of ripe summer tomatoes, so we wait until summer to eat them.
