      The museum holdings includes the personal collections of Louis Szathmary, Paul Fritzsche, Heinz Bender, and Rose Levy Beranbaum, as well as the institutional records of the Honorable Order of the Golden Toque, Les Dames d’Escoffier, and the International and International Food and Beverage Forum. The museum’s collections include approximately 100,000 volumes and over 4,000 menus, but the institution’s primary strength is its collection of ephemera. The museum’s 500,000 items represent over 5,000 years of culinary and food service history.
