Let’s start by discussing what a salad is. Salads are generally either side salads, composite salads (these can be starters or main courses) or fruit salads. It will have a body (the main ingredient) and a base and garnish – these can be one and the same, or a mixture of different things. It is most often bound together by a dressing, which will usually be thin (vinaigrette style) or thick (mayonnaise style). It is usually cold, but since the days of nouvelle cuisine, warm is also on the agenda.
