Meat has been a very important part of my life. One would imagine so, being the son of a butcher, and with three butcher brothers. Now, coming from a restaurant that is famous for its seafood, you may think that along the way I got sidetracked. Well, the truth is that I love meat, poultry and fish, and although Rockpool is famous for its fish, we have always done a number of meat and bird dishes to rival any restaurant in the world. I guess it helps to have a father who was both a fisherman and a butcher. I also have some pretty strong views on meat and poultry quality, how it should be aged and how it should be cooked. They will follow.
