I know how hard it is to be organized these days, especially when it comes to time, but you will get a much better result when cooking meat and poultry if you remember to remove them from the refrigerator and let them come to room temperature before you start cooking. This is especially true with smaller cuts that you intend to pan-fry or barbecue. The steak or chop will cook much more evenly and you can avoid the problem of having the main part cooked to your liking while another part is overcooked.
