We are all creatures of habit and, as cooks, nowhere is this more evident than in the matter of salads. People get into a particular mind-set and often serve the same leaf salads again and again. This book has dwelt at length on the subject of beans, which provide an obvious opportunity to make salads with a difference. The following examples can all be made quickly and offer refreshing different ideas to play around with and, thankfully, there is hardly a worthy pulse to be seen or heard. There is nothing remotely sexy about any of them, but the title is alliterative.
