The names and types of ingredients expressed in brackets are for the benefit of American and Australasian readers who have a different cookery language from Britain and are not always able to buy the same products. Australasian readers please note that this book features 8 floz imperial cup measurements and 15ml tablespoons (equal to 3 teaspoons). The pint measures given are British and equivalent to 20 floz; Americans should use the cup measures provided instead. Readers can use any type of measurement they feel comfortable with, however it is important not to switch between units of measurement while cooking as the quantities given are not exact conversions, nor should they be. The purpose of conversions is to allow people to easily use their preferred units of measurement, not to present them with an exact translation of grams to ounces and cups.
