Although technique is primary, good equipment is necessary in cooking the recipes of Hong Kong. Though not absolutely essential for cooking Chinese food, there are a few items that will make it very much easier. Most are inexpensive and are serviceable for a long time. Look for authentic implements from a Chinese or Asian source or in gourmet shops that specialize in good cooking equipment.
