As I said in my Introduction, a BLT began this book. That’s how powerful a sandwich can be.
Also, it’s one of my favorite sandwiches. I generally don’t like to go out for lunch, but when I do, I know that a BLT will give me just the right amount of nutrition—carbohydrates and fats and protein—without leaving me feeling heavy and sleepy, and it will hold me well until dinner.
I love a BLT using the simplest grocery-store items—Oscar Mayer bacon, toasted Wonder Bread, Hellmann’s mayo, lettuce, and tomato. The tomato has to be at least halfway decent (meaning if you salt a slice and eat it plain, it tastes good). But when prepared with great ingredients—flavorful bread, big slices of juicy summer tomatoes, and thick-cut applewood-smoked bacon—the BLT rises to another level of delicious.
