Polpo

Several varieties of octopus are commonly available, but they tend to be so similar that chefs do not usually worry about mixing types in dishes. The usual market length of an octopus is 51 to 102 centimeters (20 to 40 inches), but its maximum length is three times greater. It has eight arms clustered around its mouth. Each tentacle has a double row of suckers.
