Pasta Sfoglia

Sfoglia means “leaved.” It refers to the layers (or leaves) that are formed by rolling and folding dough over and over until multiple layers are created. The individual layers of fat and dough created in the process are thinner than a sheet of paper, but when the dough is prepared properly, they will remain intact during the rolling, turning, and baking. The finished dough is light and flaky.
