Sponge cakes are light and airy, gaining their moisture and texture from whipped egg whites in the batter rather than from butter, oil, or dairy. They lend themselves to layering or rolling with cream fillings, jellies, and fruits. Several of these recipes feature cool fillings and fruit flavors reminiscent of summertime, especially the Strawberry Yogurt Cream Torte and the Quark Cream Torte with Mandarins. But they are delicious in any other season, too, and there are also cakes with deep, year-round flavors of coffee, espresso, and chocolate such as the Tiramisu, the Mocha Sponge Cake Roll, and the minty Chocolate Mousse Cake.
