Sponge cakes bake quickly, in about ten to just over twenty minutes depending on the thickness of the cake, and they need about forty-five minutes of preparation time. Preparing the fillings and assembling the cakes take about thirty minutes to an hour. Chilling the cakes after they have been filled and assembled also will take time. Some of the recipes, such as the Mocha Sponge Cake Roll, need only one to two hours of chilling time, but other recipes, such as the Strawberry Yogurt Cream Torte, need at least eight hours of chilling time. These cakes can be left to chill overnight, which allows the flavors even more time to settle and absorb. Feel free to make them the day before serving.
