The Arrangement of the Kitchen

My book is intended to help housekeepers of modest means who must adjust to life’s vicissitudes. In this chapter I suggest several ways to arrange small apartment kitchens where the Russian stove and, possibly, a cooking range are located. The latter must be fuel-efficient and covered with an iron hood (it may even be wooden, like those in the Ukraine). Attach the hood, painted with an oil-based paint, flush to the wall over the range and high enough so that you will not bump your head. Under the hood, make a small opening (about 10 inches square)* in the stove pipe for a draft of air. Place a ventilator in the opening and attach doors that can be closed when the range is not lit.
