Kernels of grain are made up of bran, germ, and endosperm. In the milling of whole-grain flours, the entire kernel is ground. In the processing of flours not milled from whole grains, part or all of the bran and germ are removed, and much of the flavor and many of the nutrients are lost.
Some of you will be able to find whole-grain flours at your local market or natural-food store. Others will need to search the internet or place phone orders. This is a list of some of my favorite sources for whole-grain flours.
