It may seem an alarming admission for a cookery author, but sometimes wrangling with the mere thought of having to cook a meal for myself from scratch on a bad day, or when I have little spare energy, is just too much. I usually spend more time trying to wheedle myself into the kitchen than it would take to prepare a quick dinner in the first place!

Cheese toasties and jazzed-up Pot Noodles to one side, these are my favourite speedy suppers for getting something on the table or inside my tummy without trashing the entire kitchen or creating a mountain of washing up.
