This is another indication of the times. The Royal Horticultural Society has done good national service by publishing Mr. and Mrs. Vincent Banks’ well-tested instructions and recipes for Fruit and Vegetables Bottling, Pulping, Drying and Canning (with and without sugar) Jams, Jellies, Pickles, Salad Vinegar and Bottled Foodstuffs. It was edited by Mr. Wilks, Secretary to the R.H.S., who, for many years (before the war of 1914–18) had been doing his best to revive in England popular interest in Fruit and Vegetable Preservation, and had received great encouragement from Mr. and Mrs. Banks. Excellent recipes are given, and the use of the bottling thermometer is explained.
