A big learning: grandmothers do not use scales. They just know. So we paused and measured and tested so we could capture their recipes with as much precision as possible, but the ingredients may not be identical and some methodology slightly unusual. We’ve provided both metric and imperial measurements but recommend metric when baking for ultimate precision.
We encourage you to use all your senses like they do, to taste as you go and use your hands to really feel it. This is how to learn by heart.
