‘Nothing has been achieved in Lancashire without a fight against climate and circumstance: with all its graciousness it is not an easy county in which to work and live. Perhaps it is because of this we are known for our hard heads … We love a fight and admire a fighter. “He’s a good plucked ‘un” is the highest compliment we can pay a man.’

These words, written by Sylvia Lovat Corbridge in her book It’s an Old Lancashire Custom, could not be more true of the life of Paul Heathcote. Lancashire honours its heroes and Heathcote is rapidly becoming something of a local legend. It is rare for a week to pass without his bright, genial features beaming off the pages of the Lancashire Evening Post. Mrs Nelson, who keeps a B&B in Knowle Green, has filled a scrapbook with his press cuttings and her house is like a shrine to the great chef with displays of his arty brochures and publicity hand-outs in her bedrooms and hall. ‘He puts a lot back in, does our Paul, ‘says Mrs N, talking proudly of Heathcote’s charity work, his visits to schools and his cookery classes.
