The more i have become involved in cooking, whether through reading, writing, teaching, or simply entertaining at home, the more I realize how much we owe to the cooks of the past.

This is what I wrote for the first edition of this book in 1977. And this is what I would repeat for this new, expanded edition which has been redesigned with such skill by Pavilion Books and enriched by some extraordinary recipe photography by Michael Boys, assisted by La Varenne chefs Claude Vauguet and Laurent Terrasson.
