I’ve always loved meringues, even before I switched to a gluten-free lifestyle. Today, they anchor my dessert repertoire, and I have developed many variations of meringue-based cookies and desserts that I adore. Admittedly, I miss many of the cookies and brownies from my childhood that remind me of happy times, so I have created gluten-free versions of my favorite recipes. I’m really excited to share them with you here. The secret to success is to use a combination of different flours and flavorings—especially nuts and nut flours—to create the deep flavors that I crave in cookies and bars without sacrificing texture or richness.
