San Francisco’s Ton Kiang Restaurant proudly announces “Hakka Cuisine” right under the name on its sign. The restaurant has long been popular for its dim sum, wide variety of Chinese dishes, and Hakka specialties. It is named after the Ton Kiang (East River) in Guangdong Province, where many Hakkas settled.

William Wong always introduces himself as the manager, but I feel sure that he is the owner. I ask him again and he says, “I call myself the manager. I’m a very humble man.” He is also a successful entrepreneur who has managed to keep this restaurant in business for more than three decades.
