If you have a busy week ahead, you’ll be amazed at what a few hours of prep work on the weekend will do to reduce stress and improve your meals during the week: cook a big batch of brown rice or beans; wash and chop lettuce and vegetables as soon as you get home from the market; hard-boil eggs for salads and sandwiches; premake a pasta sauce, like pesto or tomato sauce, and store it in the freezer. If your weekend is just as busy, consider buying shortcut foods, like precut vegetables, prewashed greens, and premade spreads or sauces.
