There are many to thank for their help and participation in this book. The founders: John Finger, Michael Watchorn, and Terry Sawyer first for their vision in creating Hog Island Oyster Company. Certainly, the chefs and crews at Hog Island Oyster Bars are to be applauded for their hard work and creative contributions to the book. They are a young, tough, energetic group that I admire greatly. Remy Anthes, creative marketing manager at Hog Island, who helped shepherd most of the moving parts in the creation of the book. Gary Fleener, the PhD in charge of science, sustainability, and farm education at Hog Island, brought his skills as an educator and science expert to all parts of the book, helping to keep it focused and accurate.
