How to Clean Clams

Clams that we buy from our fishmonger have usually been purged of sand and debris in salt water. Fresh water will kill clams. Pick through and discard any clams with broken or open shells or that do not close when pinched. Place them in a colander and run cold water over them. Scrub each shell under the water with a clean brush to remove any external dirt or sand.
