Mussels may be the most sustainable of all seafoods. Like oysters and clams, they improve the surrounding ocean environment by filtering water and providing habitat for other critters. What makes mussels unique is their sheer abundance. Farmed or wild, mussels reproduce and grow quickly, and at very high densities. This means that mussels can truly contribute to a global seafood solution for the growing human population. Mussels are widely available, either fresh, frozen, or tinned. A beloved traditional food in France and Belgium, mussels became popular in the United States when they began to be farm-raised in the European manner. Most frozen mussels are the green-lipped variety from New Zealand, and most tinned mussels are from Spain or Portugal.
