Sole (Solea solea) has a mild, delicate, and subtly sweet flavor. The most popular varieties in the market are Dover sole and lemon sole. Their clean-tasting flavors make them popular with chefs and food lovers. Panfrying and baking are the usual cooking methods. For example, European flounder (Platichthys flesus) is a flatfish with a meaty, firm texture and mildly sweet flavor. It doesn’t do well on the grill because its tender flesh tends to stick to the grill grates and fall apart. Panfrying, broiling, and poaching are the preferred cooking methods for this fish.
