Seaweed in various forms has been eaten by humans for as long as we’ve documented such things. In Japan, Korea, and our own East Coast, for example, they are typically used in salads and soups. Extracts from seaweeds have long been used in Japan to prepare and preserve fish and meat. Powdered seaweed can be used to improve the human digestion of beans and as a flavor enhancer since it is a natural source of glutamic acid. It is becoming more and more popular in America as we discover its nutritional and ecological value. Hog Island is increasingly involved in both harvesting seaweed from their gear and their pilot project in Humboldt Bay to farm seaweed.
