Oysters at a Sunday market on Richard Lenoir, Paris

During the midsummer months of June and July, oysters are hard to come by because that’s when they reproduce. But don’t worry, you can find them in spring and in late summer, and I think they’re one of the most delicious things on earth. That’s why, in our restaurant, we have them on the menu throughout the year. In the middle of summer in Paris you’ll only find Gillardeau oysters, but those are among my favorites.
Buying a crate directly from a fishmonger is not as expensive as you might think, and opening the oysters yourself really isn’t the enormous endeavor most people take it to be.
