My cousin Joris and I run a breakfast and lunch restaurant as well as a catering business in Amsterdam. It is called ‘Aan de Amstel’, which is in fact where it is located. Since we feel that Dutch people do not eat proper lunches, and often only just a cheese sandwich and an apple, we try to treat our guests to something different. It works out quite well since most of the time as we are packed for lunch. We serve our guests salads, pies and soups that are as unexpected as possible. I have given you the recipes for a number of delicious dishes, but since our menu changes on a weekly basis, it was quite difficult to make a selection.
