Many relishes can easily be made in winter or in summer and fall since they are traditionally made from the types of firm vegetables that store well. Green tomatoes are one exception. These are found in many relishes and they can be ground and frozen before frost ends the fresh tomato season. Or if you have a friendly produce department at your grocery store, green tomatoes can also be obtained during winter months. Today, tomatoes are often shipped from warm climates while still green to help avoid bruising and spoilage. They are then allowed to ripen before going out for sale. A friendly greengrocer or produce department manager is well worth cultivating for this purpose.
