Enriched flour is white flour that has iron and B vitamins added in amounts that equal or exceed those in whole wheat flour. Four B vitamins are added to enriched flour: thiamin, riboflavin, niacin, and folic acid. Certain other vitamins and minerals are allowed as optional additives. Essentially all baked goods and pasta products made from white flour in North America are enriched.
