Modified food starches are starches that have been treated by the manufacturer with one or more chemicals approved for use by government agencies. Modified food starches are designer starches; that is, they are designed by the manufacturer to have certain desirable features. For example, starches can be modified to increase their stability against excessive heat and acid, which thin out starch-thickened products. They can also be modified for better stability when frozen, which causes starch gels to tighten, clump, and weep.
