Select one from the choices in bold or fill in the blanks.

  1. As the amount of gelatin increased from none to 1½ times the full amount, the flavor of the whipped cream increased/decreased/stayed the same. This was probably because _____. The difference was small/moderate/large.
  2. As the amount of gelatin increased from none to 1½ times the full amount, the firmness of the whipped cream increased/decreased/stayed the same. In addition, as the amount of gelatin increased, the whipped cream melted in the mouth more slowly/more quickly/about the same. The difference was small/moderate large.
  3. Overall, the amount of gelatin that gave the most appealing flavor and mouthfeel was no gelatin/half the amount/the full amount/one and a half times the amount. However, the amount of gelatin that will likely stabilize whipped cream best (that is, will keep it whipped and aerated longest) is no gelatin/half the amount/the full amount/one and a half times the amount.
  4. Overall, the creams stabilized with the two different grades (bronze and silver) of sheet gelatin were very similar/somewhat similar/very different. The main differences, if any, were as follows:

  5. Based on the results of this experiment, bronze and silver sheets are/are not interchangeable, sheet for sheet, when stabilizing whipped cream. Explain your answer.

  6. When comparing the bronze sheets to gelatin powder, the texture of the whipped cream made with the full amount of bronze sheets was softer than/firmer than/about the same as the texture of the whipped cream made with the full amount of gelatin powder. This means that the conversion between the bronze sheets and the gelatin powder used in this experiment (10 sheets gelatin equals 1 ounce/30 grams powdered gelatin) was approximately correct/not correct because the bronze sheets are lower/higher/the same in Bloom rating as this brand of powdered gelatin. Next time, for that amount of powdered gelatin, fewer/more/the same number of bronze sheets should be used.
  7. Other comments I would like to add about the samples or the experiment:
