- Tapioca starch flour (or arrowroot or potato), boiled gently 2 minutes
- Tapioca quick-cooking granules, boiled gently 5 minutes
- Instant starch (such as National Ultrasperse 2000 or Instant Clearjel), not cooked
- Modified food starch (cook-up, such as National Frigex HV, Clearjel, or ColFlo 67), boiled gently 2 minutes (or according to manufacturer’s recommendation)
- Other, if desired (tapioca quick-cooking granules at 25 percent higher level [1 ounce/28 grams], tapioca pearls, rice starch, bread flour)
