Eggs are treated with respect in France. They are seldom eaten for breakfast, but they are eaten at almost any other time of the day—when the cook has had time to give them some thought! As Thomas Moore, the Irish poet, wrote in his book on the adventures of the Fudge Family in Paris:
Who can help loving the land that has taught us
