The skillet. Use a skillet that measures 6 inches across the bottom and 8 inches across the top (approximately) for the 2- to 3-egg omelette (½ cup measured eggs).

Use a skillet that measures 8 inches at the bottom and 10 inches across the top for the 8-10-egg omelette (2 cups measured eggs). The egg mixture should be about ¼ inch deep in the skillet.

Care of the skillet. Often it is said, “Keep the omelette pan for the omelette. Never cook anything else in it and never wash it.” If you have such a pan, fine. If not, then buy an enamel-covered iron skillet, properly shaped for omelettes! That is, with the bottom rounded into the sides. This type of skillet can be used for other foods and can be washed, since water does not affect enamel as it does porous iron.
