In Heaven, where marriages are made, there exists a special bureau for the matching of wine and food. According to the rules of this bureau, certain wines are thought to be most compatible with particular foods—the orthodox viewpoint. But, as things normally go in Heaven, it is clearly understood that what sometimes appear to be mismatchings turn out to be inspired combinations. Therefore, we feel that one should ordinarily follow the conventions in mating wine with food, while remaining fully aware of the fact that an unlikely twosome could, under the proper conditions, turn out to be a blissful duo.
