West of the Auvergne mountains is Limousin. It is separated from the Marche by the Vienne River. While the Marche and the Limousin are divided by geography and history, they are united gastronomically because they both enjoy the same produce and identical food specialties.
The chief city of the Marche is Guéret, a town of ten thousand inhabitants which is the marketing center of the entire region. It supplies agricultural produce both to Aubusson, the tapestry town, and to Limoges, the porcelain town. Whatever is left over eventually finds its way to the bustling markets of Paris.
