Mission: These recipes will get us acquainted, or reacquainted, with some of the most beloved sandwiches in the world. Better still, they will give you an understanding of how to translate some well-known handheld comfort foods into their beautiful vegan versions.
Making sandwiches is where I started my cooking journey. By first grade I could throw together something with cold cuts and mayonnaise. Then came tuna fish and egg salad sandwiches. And at some point between second grade and voting in my first election I made my way to grilled cheese. While no one is giving away any Michelin stars for these accomplishments, they’re definitely the start of cooking! So consider these sandwiches a fun little gateway to more serious cooking. You can get out the cutting board and play with combinations. Figure out your taste preferences—mayo or mustard? Red onion or nah? And in the end, you get a meal out of the deal! This chapter isn’t just about stuff between bread, either; it encompasses anything we eat with our hands, from tacos to pizza. So all the major food groups.
