You won’t need any complicated equipment here—I do most of my mixing with a fork. But you will need a few things.
Oven thermometer: Your oven lies to you. Make sure that the temperature is correct and everything will fall into place.
A few good-size mixing bowls: Although most of the recipes in this chapter are one-bowl, it never hurts to have a collection of varying sizes, from tiny to this-gigantic-bowl-doesn’t-fit-anywhere.
A good strong fork with a longish handle: Make sure you have a favorite one that doesn’t bend.
