The pick of the season this month, as last, is salmon, sea trout and shellfish – either cheap crab and shrimps, or expensive lobster and langoustines. Sardine is Miss Barbecue Fish of the Month, although mackerel gets the runner-up’s cheque and the chance to sit on tart little puddles of gooseberry sauce all summer long.
