Every recipe must be read through completely before starting to cook. In the methods I have mostly assumed that ovens and grills will be pre-heated, except in one or two cases when it is particularly important and I have laboured the point. The £ symbol at the head of each recipe – from £ to £££££ – suggests a comparative ingredient cost per portion for the dish. At the time of writing each £ symbol is equivalent to around 50p a serving. So ££ = around £1, and £££££ = around £2.50 a head or more.
