Preparation notes preceding the hyphen are tied in with measurement; preparation notes following the hyphen should be carried out after measurement (e.g. for ‘2 tablespoons chopped parsley’, you have to chop the parsley before you can measure 2 tablespoons; for ‘2 oz parsley, washed, dried thoroughly, trimmed and finely chopped’, you take 2 oz parsley, and prepare it. Obviously, you are not necessarily left with 2 oz.)

All recipes were tested with imperial measures, which I use almost without exception. Converting a recipe to metric measures does not work systematically; you have to nudge everything up or down for them to stay in the same proportion. I would rather that this was done by readers who like cooking and thinking metrically than risk giving my own untested conversions, possibly with errors; so I refer them to the conversion tables below. All spoon measures are slightly rounded, unless specified heaped or level.
